Weekly update week of July 27

A little late for this weekly update, as my motivation the last couple weeks has been lacking. We spent the week celebrating one of my dearest friends, Jackie’s birthday and had so much fun doing it.

Most of the week was pretty chill. I did make a Kraft recipe for salad-topped taco pizza. I added some extra spices to the meat. Otherwise I’m such a fan of different types of pizza and this one is okay on weight watchers. One piece is only 6 points on the green plan and you could probably use a different crust to lessen the points.

Recipe: Salad-Topped Taco Pizza

1 LB ground beef
1 cup Salsa
1 ready to use baked pizza crust
1 cup Mexican cheese
1 large tomato sliced
2 cups mixed salad greens
2 tbsp ranch dressings

Heat over to 400. Brown meat, drain, and stir in salsa. Spread onto pizza crust. Top with cheese and tomatoes. Bake 10-12 minutes or until crust is lightly browned and cheese is melted. Top with salad greens and drizzle with dressing.

This recipe is so simple and great for a busy week night meal.

As for Jackie’s birthday celebration we went to one of our favorite restaurants, Tavern Six to celebrate on Jackie’s actual birthday. Their patio is just perfect for something like this. Then on Friday we had a girls day and took the kayaks out on the Chagrin River. This has become one of my favorite past times. It is just so peaceful and relaxing. The launch point is off of Erie road and you can either rent kayaks from them or launch your own for $2 dollars. The other thing I very much enjoy about kayaking the Chagrin is there are a couple restaurants to stop at if you need a break or just want to grab some food or a drink. We spent the whole day out on the Chagrin, and did make a few stops along the way.

We stopped at Trader Jack’s for some early afternoon drinks. Some of the ladies I was with tried their specialty drinks, which consisted of a Strawberry Daiquiri and an Orange Creamsicle. I tried the Orange Creamsicle as it seemed like the girls were divided as some of them really liked it and others did not. I at first was not a fan then took another sip and it was unique and pretty good. I am not a huge fan of orange as a flavor but this did not taste artificial and the creamsicle taste helped. We did not get any food here which was probably a huge mistake because then we were starving by the time we got to our next stop at the Chagrin Tavern.

Chagrin Tavern is a new restaurant that was built and opened this summer. It sits right on the Chagrin River with docking spots for boats, jet skis, and/or kayaks. We decided it was time for a break and some food so we decided to stop here for lunch. I will do a full review on Chagrin Tavern since it is a newer restaurant and I have some pretty mixed feelings on it. For the purposes of the weekly update this experience was good. Our service was good, the food came out quickly, hot and cooked correctly. I got the Tavern burger which is two patties, cooked to your liking, with lettuce, and cheese. I picked the healthier side getting a side salad. I was a little disappointed as my bowl of salad was not even half way filled and it was just a lettuce mix, tomatoes and cheese. I was really looking forward to a good salad to go with my burger, with all the working out we had done that day. My burger was cooked very well and was nice and hot when it came out. I will say this was a much better experience then I have had previously.

So glad I got to enjoy this week celebrating one of my sweetest dearest friends. Hope you had a blast Jackie!!!
